5 large carrots
2 large onions cut in halves
Sprigs of thyme
2 Celery sticks chopped roughly
2 large garlic cloves cut in halve
I tablespoon cumin
1 teaspoon coriander
1/2 teaspoon cloves
I teaspoon nigella seeds (optional)
Wash bones and clean. Pour bones on a lined baking tray or large flat pan. Add carrot, onion and garlic and roast until bones aregolden brown. Pour roasted bones in a long pan and add the. Cumin, nigella seeds , bayleaf and coriander. Add enough water to cover the bones completely. Cool on low heat for 4+ hrs or until it reduces to desired thickness, about a cup.
