This is one of the easiest soups I have prepared but there is nothing simple about the flavor profile. It is supper yummy and so delicious, you'd have to keep on making it.
What you need
3 large carrots chopped into 2 each
4 chunks of fresh chicken
2 sprigs of rosemary
1 long red bell pepper, cut into 2
1/2 tablespoon salt
3 star anise
1 small ginger
1 small onion
1 onion, 5 garlic cloves & handful of chili blended together.
1 teaspoon chicken seasoning.
Handful of fresh basil
You can wrap all the spices in a cheese cloth before you put into pot. It saves you the time of having to remove them after soup is done cooking.
Put chicken chunks in a pot. Add the rest of the ingredients except chicken seasoning. Put pot over medium low heat and simmer for 10 minutes. Add 1 1/2 cups of water and cover. Allow to cook gently until veggies are cooked. Blend veggies and strain. Pour the strained mixture back into the pot. Add chicken seasoning and continue cooking until chicken is soft. Taste and adjust salt. Remove chicken from soup and shred with a fork and put back into soup, alternatively, you can leave them whole. Add fresh basil and turn off heat. Cover and allow soup to stand for 5 minutes. Serve.
