Coconut & Garlic Rice with Fish in Sauce

I worked on this recipe yesterday. The initial idea was to make a quick stir fry because I was starving. I prepped all the ingredients, realized that I had coconut milk and then the plan changed to this yummy coconut & garlic rice and fish in sauce. It's super simple to make but by god is it tasty. PS: the fish is cut into chunks because the initial idea was a quick stir fry.

what you need

For the coconut & garlic rice

1 1/2 cup jasmine rice

1 cup coconut milk

1/2 tablespoon garlic mince

1 teaspoon veg oil

salt

water

For the fish in sauce

I cup tomatoes, cherry cut into halved/ regular tomatoes diced

2 medium fresh mackerel, cleaned, skin removed and deboned cut into chunks.

4 garlic cloves

6 chili peppers, adjust

1 small ginger

1/3 teaspoon fennel

1/3 teaspoon cumin

1/3 teaspoon coriander

1 large carrot, diced

1 small green bell pepper, sliced

1 teaspoon coconut oil

1 teaspoon curry powder

1/2 teaspoon turmeric

Direction

Put a pot over medium heat. Add rice, garlic, oil and stir. Let it toast lightly and add the coconut milk and 1/3 cup of water. Add salt, stir and adjust taste. The kind of rice I use needs just a little quantity of moisture to cook. Know your rice. Lower heat and fluff rice with fork and allow to cook through. Set aside

Toast the spices until fragrant and blend together with some the chili, 2 garlic cloves, onion and ginger to form a paste. Finely dice some chili and the rest of the garlic and set aside.

In a non stick pan, add the coconut oil. Allow it to heat up and add the sliced onions, minced garlic and curry powder. Fry for 3 mins then add the diced chili and turmeric. Add the blended mixture. Fry for 5 mins.

Add diced carrots and cook down for 2 mins. Add the cherry tomatoes, stir, taste to adjust salt. Add the coconut milk and 1/3 cup of water and reduce heat.

Add fish to the sauce and allow to simmer gently flipping it at 2 minutes intervals until its cooked through. Remove fish from sauce and set aside. Cook until sauce is thick, taste and adjust flavor. Add a pinch of sugar if the sauce is too sour.

Add sliced green pepper to the sauce, stir and add the fish. Serve with rice
