Egg Noodles

I can't remember the last time I bought pasta/noodles after learning how to make it. It's one of those things that seem intimidating until you try to make it for the first time and then you realize how easy and relaxing it actually is. I have a pasta machine that makes it easier to roll the dough out but a rolling pin works just fine also, you just need a big flat surface and upper arm strength which I lack so a pasta machine it is for me.

what you need

250g hard flour (high gluten flour), about 2 cups + 1 1/2 tablespoon*

90g egg (2 medium sized)

30ml water

  • when measuring the flour, spoon it into the cup instead of dipping the cup into the flour to het the quantity right.

  • Directions

Combine flour, whisked eggs and water together in a bowl. Mix until there are no flour bits left then pour unto a clean surface and knead until completely smooth as a baby’s butt. It is a very tough dough so don't be tempted to add additional water. Cover dough in a cling film and cover with a damp napkin. Let dough rest on the table for 30 mins.

Once the dough is rested, divide it into 2 and cover one half with a damp napkin and set aside. Flaten the dough with palms or rolling pin. If using a pasta machine start from the widest setting and keep stretching dough until very thin then cut into desired shape. Dust the noodles with flour before cutting and dust afterwards so it doesn't stick together. Do same for the other half. Check my instagram highlights for a video tutorial of this process.

If rolling manually, dust flat surface generously with flour. Flatten dough with palm and roll dough out with a rolling pin. If dough shrinks when you stop rolling, cover it with a damp cloth and let it rest for 15 mins before rolling it out again. Roll dough out till so flat this it's transparent. Dust dough generously with flour and roll loosely into the shape of cigar. Using a sharp knife, cut dough into preferred noodles size. Gently separate the noodles from each other and dust with flour so they doesn't stick together. Divide noodles into 2 if too long. Don't worry if noodles don't look perfect, they'll still be delicious.

To cook noodles, boil for 6 to 7mins then drain and place immediately into iced cold water with ice to stop the cooking process. If water gets too warm, pour it out and replace it with more cold water. Rinse noodles in cold water and pour into sieve to drain. Use for my chicken noodles or perhaps my quick noodles or any noodle dish you wish to make.
