Fudgy Chocolate brownies

On my quest to create the best brownies I could probably make, I read extensively on how various ingredients could impact the flavor and texture of brownies. Even the type of chocolate and flour used could impact the flavor dynamically. I am not a brownie person so I'm on an eat when you crave basis with it. I woke up this morning and thought what the hell, I’m going to make brownies how I love to eat them and if it works it works. This is the brownie I came up with. It's fudgy, chocolatey, chewy and just a it dense. By using less than a cup of flour, the chocolate has become the real hero as it should. I used 72% dark chocolate with very high quality Ghanaian cocoa powder. What elevated the flavor the most to me is the addition of salt and coconut oil. This is not any kind of coconut oil though, this is golden, toasty and so damn fragrant you'd want to drink it on it's own. Recipe

what you need

1/2 cup soft/all purpose flour

100g 72% dark chocolate 

1/4 cup high quality natural cocoa powder

95g unsalted Butter

30g very good coconut oil (it needs to actually smell like coconut)

3/4 cup brown sugar

1/2 cup granulated white sugar

2 medium sized eggs

1 teaspoon salt

1 teaspoon vanilla extract


Directions

Preheat oven to 170C

Combine the dark chocolate, cocoa powder, butter and coconut oil in a heat proof bowl. Set on boiling water (the bottom of the bowl shouldn’t touch the pan). Melt until chocolate and butter is dissolved then remove from heat.

Add both sugars, salt and stir. Add the eggs one at a time and whisk to incorporate. Add the vanilla extract, stir and add the flour. Stir gently to combine .

Grease a baking pan (6 x 6 inch) and line with a grease proof sheet. Brush the grease proof sheet with a bit of coconut oil to avoid a sticky situation. Pour the brownie butter into it. Bang the pan to get rid of all the air pockets. Place in the middle rack and bake for 40 mins, 5 minutes extra if you want it drier. (it should look crackly and shiny on the top). Remove from the oven and allow it to cool down in the pan for 10 mins. Remove from the baking pan and slice.
