I think Mac & Cheese is something that we all love to eat but have to adjust to fit our palette. So even though I love this version of Mac & Cheese, you can still load it up with your favorite things and enjoy it. Short tutorial video will up on my instagram highlights
what you need
3 cups macaroni
1 1/2 cup grated Gouda + 1/3 cup for topping * (see note)
1 cup grated Mature Cheddar*
1 cup grated mozarella*
2 1/3 cup milk
1/4 cups unsalted butter + 2 tablespoons
1 1/2 tablespoon plain flour
1 teaspoon garlic paste
2 teaspoons paprika powder
1 tablespoon chili powder (adjust)
1/4 cup bread crumbs *(see note)
1/2 cup parsely
4 bacon strips
2 jalapeños or chili peppers diced
*Don't buy already grated cheese if possible, grate it at home yourself. You can also use sharp cheddar or just cheddar to replace mature cheddar.
*Also if you don't readily have bread crumbs on hand, cut a slice of a crustless white bread, toast it lightly then grate it.
Cook the marcaroni in slightly salted water a minute less than it's required to cook. Drain and rinse with cold water and set aside.
Cut the bacon into smaller pieces and fry in a non stick pan until crispy. Don't discard bacon drippings. In the same pan over medium heat, add the 1/4 cup butter and allow to melt then add the garlic paste. Fry garlic for a minute then add the flour. Using a whisk, stir flour until the it fully incorporates. Keep whisking until it turns golden. Add the milk. Whisk until the milk is fully combined and smooth. Add the paprika and chili and keep whisking for 2 mins. Add the cheeses gradually, a cup at a time, whisking as you go so it incorporates fully before adding the rest gradually. Turn heat off. A very thick cheese mixture should form. Taste and adjust salt. Add the macaroni a cup at a time so that macaroni and cheese mixture ratio are equal and macaroni is fully coated with the cheese sauce.
Pour the Mac & Cheese into a lightly greased baking dish and top with 1/3 C cheese gouda + finely diced jalapeño or chili peppers. In a pan melt the 2 tablespoon of butter and add the bread crumbs. Fry until bread crumbs turn golden then sprinkle on Mac & Cheese. Bake in preheated oven for 20-30 minutes, until bubbly or golden brown. Sprinkle fried bacon on it and serve immediately. Fry leftover and serve with ketchup or chili sauce or eat as it is.
*Serve with a lightly dressed salad, it won't allow the Mac & Cheese fill you up so fast. 😉
