Chicken Noodles

Sometimes I find inspiration on social media especially when my mind is black and I can't think of new recipes. I saw a picture of a chicken noodle dish on twitter and knew immediately that I was going to try and replicate it at home so this is my version of chicken noodles as posted by Zubzz. Recipe Yields 3 Servings

what you need.

2 chicken breast (500g), skin removed

200g green bean (about 20)

2 bell peppers (green pepper), sliced

1 small onion, dice

5 red chili diced (adjust)

1/2 tablespoon teriyaki

1 medium zucchini, thick slices

1/3 cup diced pale (white) part of spring onions

250g egg noodles

Salt

Ice

1/4 cup veg oil

Marinade

1 tablespoon oyster sauce

1 tablespoon soy sauce

2 tablespoons grated ginger

2 tablespoons grated ginger

2 tablespoons grated garlic

1 teaspoon spice mix (rosemary, fennel, cumin etc)

Stir Fry Sauce

1/3 cup soy sauce

2 tablespoon oyster sauce

2 teaspoons brown sugar

1 tablespoon sesame oil

2 tablespoon teriyaki

Directions

Mix all the marinade ingredients together in a bowl and set aside. Clean and cut chicken into thick strips and pour marinade over it (you can freeze chicken for about 10 mins to make it easier to slice). Set aside in the refrigerator for at least 30 mins.

Add salt to water and allow to boil.. Cook green bean in boiling water for 2 mins then quickly drain and put in ice cold water to stop the cooking process. Add more ice if water gets warm. Let the green bean sit in the cold water for 3 mins then remove and pat dry. Trim the edges and cut each into halves and set aside for later.

If using my egg noodles, cook noodles in salted boiling water for 6:30 mins, drain it and immediately pour into cold water with ice to stop the cooking process. If water gets too warm, pour it out and replace it with more cold water. Rinse noodles in cold water and pour into sieve to drain. Set aside for later. if your are using a different kind of noodles, cook 30 secs less than the instructed time, drain and immediately put into cold water with ice. Let it sit in ice water for 5 mins then pour into sieve to drain completely.

Combine the stir fry sauce ingredients and set aside. Add oil to wok/non stick pan over medium high heat. Allow the oil to heat up until very hot then add the spring onions and diced onions. Stir and add the marinated chicken slices. Fry chicken for 4 mins then add the diced chili, bell peppers and zucchini . Stir, taste and adjust salt. Fry veggies for 3 mins then add the cooked noodles and green bean. Stir and add the stir fry sauce. Stir, taste and adjust salt. Allow to cook for 3 mins then turn off heat and serve.
